Sweet Corn Bread - Made with Bisquick

Corn bread and Low Calorie just doesn't seem to mix. Though I did think of possible substitutions later that could get the calories lower(added them below, but beware, they haven't been tested). This cornbread came out sweet, moist and yummy!

Created by taking bits and pieces of different recipes and throwing them together.


Serving 1 Corn Bread Muffin
Calories: 95..........Carbs: 19..........Fiber: 1..........Fat: 2
..........Protein:2..........Sugar: 1..........Sodium: 103

Weight Watcher Points: 3

Ingredients: Makes 12 Corn Bread Muffins
1 Cup Heart Healthy Bisquick (could sub 1 cup flour & 3 1/2 teaspoons baking powder)
1 Cup Yellow Corn Meal
1 Egg (could sub egg whites)
1 Cup Unsweetened Almond Milk (could sub water..or other milk, but milk will likely make calories higher)
1/3 cup Sugar
1/3 cup Stevia (or splenda etc)

Directions:

Preheat oven 350 degrees

1) Spray muffin tin with non stick spray
2) Mix all ingredients (make sure there is no clumps)
3) Fill each hole until about 3/4 full

Bake for 20-25 minutes or until toothpick comes out clean. Let sit for 1-2 minutes.

Enjoy (Butter optional)
